Toons Bridge Dairy Halloumi

Halloumi is the cheese of Cyprus, traditionally made with sheep, goat and cow milk. We make ours with a mix of sheep and cow. We start with raw milk, and then cook the pieces in the whey at 85C. 

Halloumi is for cooking and does not melt. Grill in a pan in thick slices and gently caramelise the edges.
