Bright green small olives from Provence. These are cracked and cured with large amounts of fennel and thyme. Picholine means the “little nut” in Provence. Harvested very fresh and young, and ready two months before any other olives. Will oxidise very quickly if out of their brine. Very short shelf life and big domestic French demand mean these olives are often only available till late spring.
