  • Vincenzo La Manna makes his Pecorino in our Dairy at Toons Bridge
  • He uses an old family recipe from the Marche region of Italy where he's from
  • He keeps his herd of 21 sheep in nearby Carrigdangan, and brings the milk to Toons Bridge three times a week in order to make his Pecorino.
  • Dry cheese, made from raw milk, with a sweet flavour and a slight picante quality when fully aged
  • Serve as a table cheese or grate over pastas, meat dishes, soups and salads.
