Origin: Made in our Dairy at Toonsbridge, Macroom, West Cork.


Vincenzo La Manna makes his Pecorino in our Dairy, at Toons Bridge. He uses an old family recipe from the Marche region of Italy. Vincenzo keeps his herd of 21 sheep in Carrigdangan, and brings the milk to Toons Bridge three times a week in order to make his Pecorino. It is a dry cheese, made from raw milk, with a sweet flavour and a slight picante quality when fully aged.

Serve as a table cheese or grate over pastas, meat dishes, soups and salads.
