Ricotta is a cheese made from the whey and has a completely different composition to normal cheese. It should, like mozzarella be used as fresh as possible.
Serve it on its own with antipasti, or use it in both savoury and sweet recipes, making a great alternative to cream. Our ricotta is extremely smooth as we add cultured cream to the whey.
Ricotta is fully pasteurised and has a shelf life of ten days.
