Picholine olives are small bright green variety from Provence in France. They are harvested young, then cracked and cured with large amounts of fennel and thyme. Picholine are a crunchy olive with a light, fresh flavour. The French word "Picholine" means the “little nut”, and refers to the shape of the olive.

Picholine olives are best kept in their brine, otherwise they can oxidise and turn brown. Store your Picholines in the fridge, making sure that they are fully submerged in their brine in order to keep them tasting and looking fresh.
